Education Secretary Sonny Angara urged education stakeholders to collaborate on transformative education reforms that empower Filipino learners during the Department of Education (DepEd) Region III’s 2024 Education Week at the Baler Convention Center in Aurora.

“As constituents of the Department of Education, we know that educational excellence is a collective journey. Lahat po tayo rito [ay] may contribution. Each of us has a crucial contribution to molding the future of our students,” Secretary Angara said.

“Transformative education is not just the act of teaching. It is creating a culture, a culture which engenders growth, collaboration, and empowerment among educators and learners,” Sec. Angara noted.

The Education Chief reiterated the agency’s commitment to addressing key challenges, such as improving school resources, advancing teacher welfare and development, and solving social and economic challenges like malnutrition and poverty that hinder students’ learning.

Sec. Angara also acknowledged the challenging work of DepEd personnel and noted that they “are working very hard for learning outcomes, for the welfare of teachers. You [DepEd personnel] deserve every centavo.”

The recent summit features a range of activities, including learners’ performances exhibit, schools’ networking booths highlighting their best practices and innovations, consultative assembly, mental health and resiliency talk, sports festival, youth jam, heritage visit, and outreach activity.

Sec. Angara also lauded the efforts of DepEd Region III in organizing the event, which underscored Central Luzon’s dedication to fostering partnerships and giving transformative educational opportunities to Filipino learners.

Puto Bumbong and Bibingkang Galapong: The Heart and Soul of a Filipino Christmas Feast

Wazzup Pilipinas!?

When the Christmas season arrives in the Philippines, it isn’t just the twinkling lights, joyful carols, or cool December breeze that define the holidays—it’s also the unmistakable aroma of two timeless holiday delicacies: Puto Bumbong and Bibingkang Galapong. These treats are more than just food—they are cultural treasures, symbols of warmth, tradition, and Filipino hospitality during the most wonderful time of the year.

Puto Bumbong: The Purple Jewel of Christmas

No Filipino Christmas is complete without Puto Bumbong, that iconic purple sticky rice delicacy served fresh after Simbang Gabi (Dawn Mass). Traditionally made from pirurutong (a variety of glutinous purple rice), it’s steamed in bamboo tubes (bumbong), giving it its unique cylindrical shape and texture. It’s then topped with butter, grated coconut, brown sugar, and sometimes grated cheese for an extra layer of indulgence.

Nutritional Anatomy of Puto Bumbong

Sodium (112.5%) – From butter and cheese, adding a savory contrast.

Fat (48.0%) – Contributed by rich butter and coconut.

Fiber (16.6%) – Provided by glutinous rice.

Total Sugars (32.6%) – From the sweet sprinkle of brown sugar.

Key Ingredients and Their Roles:

Grated Cheese: A salty kick that balances the sweetness.

Softened Butter: Adds creaminess and savory richness.

Brown Sugar: A sweet caramel-like touch.

Grated Coconut: A fresh, tropical flavor.

Purple Rice Cake: The hearty, chewy base providing energy and texture.

Every bite of Puto Bumbong is a sensory delight—earthy, sweet, salty, and creamy—all wrapped in holiday nostalgia.

Bibingkang Galapong: The Warm Hug of Christmas Mornings

Alongside Puto Bumbong, Bibingkang Galapong takes center stage during Filipino Christmas gatherings. Made from galapong (fermented glutinous rice batter), coconut milk, sugar, and eggs, this rice cake is traditionally baked in clay pots lined with banana leaves. Charcoal is placed both above and below the batter, creating that perfect balance of softness and slightly charred edges.

Nutritional Anatomy of Bibingkang Galapong

Carbohydrates (60%) – From glutinous rice, providing sustained energy.

Fat (30%) – From coconut milk and butter, adding richness.

Key Ingredients and Their Roles:

Salted Egg: Adds a salty-savory contrast.

Grated Cheese: Provides a creamy and tangy finish.

Coconut Milk: Ensures richness and a soft, moist texture.

Butter: Adds flavor and a silky mouthfeel.

Galapong Base: The heart of the cake, offering chewy goodness.

Bibingkang Galapong isn’t just food—it’s an experience. The smoky aroma from the banana leaves and the subtle char from the cooking process create a nostalgic flavor that feels like a warm Christmas hug.

More Than Just Food: Symbols of Filipino Christmas Tradition

Both Puto Bumbong and Bibingkang Galapong are more than delicious desserts—they represent the essence of Filipino Christmas:

Tradition: Recipes passed down through generations, prepared with care.

Community: Enjoyed after dawn masses, shared with family and friends.

Warmth: A symbol of togetherness, generosity, and holiday cheer.

Every bite tells a story—a story of faith, family, and festive spirit.

A Timeless Tradition Worth Celebrating

In a world where modern trends constantly change, the enduring presence of Puto Bumbong and Bibingkang Galapong remains steadfast. These delicacies are not just treats for the stomach—they are nourishment for the soul.

So, this Christmas, as you savor the chewy, sweet perfection of Puto Bumbong and the soft, warm embrace of Bibingkang Galapong, remember: you are not just tasting food—you are reliving history, embracing tradition, and celebrating love.

Merry Christmas and may your holiday table be filled with warmth, sweetness, and Filipino pride!
