Don Papa Rum Ambassadors and Don of Cocktails Hit Philippine Bars

Don Papa Rum, a premium aged small batch rum from the Philippine island of Negros Occidental (known locally as Sugarlandia), is the flagship spirit of the Bleeding Heart Rum Company, the trading arm of Chat Noir Co.Inc, based in Manila.

Don Papa puts other rums to shame and sets a new standard in Philippine luxury with its magnificently bottle packaging with eye-catching design and a real cork stopper. Distilled from the finest sugar cane, Don Papa actually has two products, its flagship spirit, the 7 year old, which is aged in American oak barrels thus giving it a light amber color. It is light and fruity on the nose, smooth and delicate in the mouth with a long textured finish, offering flavors of vanilla, honey, and candied fruits.

Meanwhile, the second product, the limited-edition super premium 10 year old, showcases the Blender’s art to perfection. A careful, artisanal process by dedicated master craftsmen steeped in the Filipino rum-making tradition. The rum is aged for ten, long years in re-charred American oak barrels, giving it a dark amber color with hints of oak and vanilla. Its higher cask strength gives Don Papa 10 year old a slightly higher ABV of 43%.

At the Philippine launch of Don Papa 10 were Matthias Cadeac D’Arbaud, Don Papa Rum’s International Brand Ambassador, Davide Boncimino, the overall champion of Don Papa’s first-ever cocktail competition, a nationwide search for the ultimate Don of Cocktails, Celina Le Neindre, another Don Papa Brand Ambassador, and Kathryn Eckstein-Cornista, Don Papa Brand Ambassador and Mixologist. Also at the event were Christel Molina, Don Papa Brand Manager, Andrew Garcia, Managing Director for Asia-Pacific, and Monica Llamas, Head of Brand Communications.


Davide, the 26 year-old Half Italian-Half Filipino head bartender of Mr. Fogg’s Residence (considered as one of the top 100 bars in the world) won because of his cocktail concoction called “Fix in the Mind”, which is said to be reminiscent of his childhood experiences during his visits to the Philippines. This winning cocktail makes use of home-made monkey nuts syrup blended with rice juice, coconut milk,lime, and crème de banana, producing an exciting and intoxicating Don Papa serve. He served the said drink at three bars which were part of his Philippine bar tour, a part of his price for winning the Don Papa cocktail competition.




Below are some of Davide's cocktail concoctions:

DAVIDE BONCIMINO’S COCKTAIL SERVES

1) Fix in the Mind

- Inspired by DavideBoncimino’s childhood experiences in the Philippines, Fix in the Mind is his winning Don Papa cocktail serve, combining unique home made ingredients reminiscent of the Philippines everyday life

Ingredients:

50 ml Don Papa Rum (regular)
10 ml Briottet Crème de Banana
10 ml Coconut Milk
10 ml Rice Juice or Almond Juice
15 ml Homemade Peanut Syrup
5 ml Fresh Calamansi Juice
Dried Bananas or Burned Banana

Instructions:

Pour all ingredients in a cocktail shaker, add ice, and shake. Pour all ingredients into a wooden glass and garnish with a dried banana


2) Las Filipinas

- A light and easy cocktail that draws inspiration from a cross of flavors derived from Italy and the Philippines.

Ingredients:

20 ml Don Papa (regular)
30 ml Mancino Secco
30 ml Aperol
Lemon

Instructions:

Pour all ingredients in a mixing glass, add ice, and stir. Served in a rock glass with a lemon twist garnish.


3) Symphony 10

- Inspired by Don Papa 10’s bold flavors and the use of Mozart Chocolate Bitters, the Symphony 10 enhances Don Papa 10’s tasting notes of cacao, dried fruits, and a hint of oak

Ingredients:

45 ml Don Papa 10
20 ml Mancino Chinato
10 ml Cointreau
15 ml Fresh Lime/Calamansi Juice
2 Teaspoons Caster Sugar
2 Drops Mozart Chocolate Bitters
Lime/Calamansi Peel and Dark Chocolates

Instructions:

Pour all ingredients in a cocktail shaker, add ice, and shake. Pour all ingredients and serve in a coupette glass. Add a lime peel and dark chocolate for garnish
