One of the best qualities of Mexican culture and cuisine is its ability to make the most of everything. And no other dish defines the can-do spirit of Mexican culture than Puerco Pibil, a simple, slow roasted pork dish. Start off your birthday right with this incredible recipe featuring Jose Cuervo Especial Silver.

3 tablespoons achiote powder
1 teaspoon cumin powder
2 tablespoons black pepper ground

½ cup orange juice
½ cup white vinegar
8 cloves of garlic, minced
2 tablespoons salt

2 shots Jose Cuervo Especial Silver
5 lbs kasim (pork butt)
Banana leaves (optional)

Preparation:
  • Combine achiote powder, cumin, cloves, allspice and peppercorn into a powder.

  • Add spice mix, vinegar, orange juice, salt, and garlic in a blender on high for 45 seconds.
  • Add Jose Cuervo Especial Reposado and Tequila into the mix and blend for an additional 30-60 seconds. Set mix aside.
  • Cut pork into 2 inch cubes and place into a large ziplock bag and pour mix over the pork. Be sure to mix the bag in order to evenly spread the mix. Set aside and refrigerate for 4 hours.

  • Pour pork and mix into the pan.
  • Cover with more banana leaves and then cover with foil. Wrap the foil around the pan to ensure that steam does not escape.
