Commune Cafe Hosts the Third Wave of Coffee Event




Wazzup Pilipinas!

And I thought I blogged about this already...now I realized I must have drank too much coffee that day that I skipped writing about this event. Well, it was because I originally assigned it to somebody, but then I showed up when I tried to catch up and attended the event even though I was late...and so I was just confused...thinking somebody will be writing it for me...I guess it was really the coffee - made me so dizzy...hehehe

The event at Commune Cafe was nothing short of a good afternoon because we got to know and observe the use of some cool kitchen gadgets - which magically makes coffee.

I never imagined there could be handy kitchen devices that can be used to concoct different ways of making coffee. Thus coffee is no longer just a drink - it is an art!

Third wave coffee culture has arrived bringing with it an intensified interest in independent coffee roasters.




Ros Juan did say to Google the Third Wave of Coffee to find out more - and indeed there was a lot of information about it being a movement of sorts.

Wikipedia explains thoroughly that "the Third Wave of Coffee refers to a current movement to produce high-quality coffee, and consider coffee as an artisanal foodstuff, like wine, rather than a commodity. This involves improvements at all stages of production, from improving coffee bean growing, harvesting, and processing, to stronger relationships between coffee growers and coffee traders and roasters, to higher quality and fresh roasting, at times called "microroasting" (by analogy with microbrew beer), to skilled brewing.

Third Wave Coffee aspires to the highest form of culinary appreciation of coffee, so that one may appreciate subtleties of flavor, bean varietal, and growing region – similar to other complex culinary products such as wine, tea, and chocolate."



In short, it actually means taking coffee making seriously!

It's a new coffee revolution that is on a mission to improve our daily cup of coffee!


The third wave aims to produce cutting-edge cafes. While many roasters jealously guard their blend recipes, the third wave is all about transparency. The third wave’s emphasis on manual, rather than mechanical, brewing is further emphasized in this movement.

I wonder if these concepts will work in the Philippines, or has it worked already and I'm just too alienated to have noticed. Sooner or later somebody will try to pirate the recipe.

Third-wave coffeehouses are invested in fostering long-term relationships with both their farmers and customers. The third wave is not necessarily about the assembly-line method of coffee brewing that mega-chains like Starbucks have promoted.

  1. The are a handful of third-wave coffee shops in the Metro: Craft, Curator, Kuppa, Magnum Opus Fine Coffees :) You should check them out as they have their own personalities.
